I used to steam all my veggies. Easy, healthy. But not so appealing to kids, it turns out.
Now I have an even tastier way to prep veggies, which I find delights the Joy Boys. They gobble this stuff down, I tell you. They even pluck veggies from the other guy’s tray!
Easy, Healthy Oven-Roasted Veggies
1 head of cauliflower or broccoli and/or
1 bunch of beets and/or
1 big bag of brussels sprouts and/or
1/4 cup olive oil
Optional: curry powder, cumin, garlic cloves
Preheat oven to 450 degrees
Chop up your veggies. Put them into a large roasting pan, give them a light drizzle of olive oil and sprinkle of sea salt. If your kids are more adventuresome, add some spices or garlic.
Chuck the whole thing in the oven for 30 minutes, stirring once. Done. Enjoy!
